Instructions
1.
Preheat your oven to 400°F (200°C).
2.
In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, egg, garlic, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.
3.
Form the mixture into meatballs, about 1 inch in diameter.
4.
Place the meatballs on a baking sheet lined with parchment paper.
5.
Bake for 20 minutes or until cooked through and golden brown.
6.
While the meatballs are baking, prepare the sweet peppers and bib lettuce for serving.
7.
Once the meatballs are done, serve them on a bed of bib lettuce with diced sweet peppers on the side.
