Instructions
1.
Preheat your oven to 400°F (200°C).
2.
In a large bowl, combine ground turkey, cooked quinoa, grated zucchini, chopped spinach, onion, garlic, egg, Italian seasoning, salt, and pepper. Mix until well combined.

Form the mixture into meatballs, about 1 inch in diameter.

Place the meatballs on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until cooked through.

While the meatballs are baking, prepare the Brussels sprouts by trimming and halving them. Toss with a little olive oil, salt, and pepper, and roast in the oven for 15-20 minutes until crispy.
6.
Serve the meatballs in whole wheat wraps with roasted Brussels sprouts on the side.

1 tsp Italian seasoning
9.
Salt and pepper to taste
10.
Whole wheat wraps (for serving)

Brussels sprouts (for roasting)
