Instructions
1.
Prepare the vegetables: Wash and chop the mixed greens, slice the cucumber, and halve the cherry tomatoes. Grate the carrots if not pre-shredded. (5 minutes)
2.
Cook the vegan chicken strips according to package instructions, usually about 5-10 minutes in a skillet over medium heat until heated through. (10 minutes)
3.
In a large bowl, combine the mixed greens, tomatoes, cucumber, and carrots. Toss gently to mix. (2 minutes)
4.
Add the cooked vegan chicken strips on top of the salad. (1 minute)
5.
Sprinkle with shredded cheese and croutons if using. Drizzle with dressing and toss lightly before serving. (2 minutes)

4 cups mixed greens (lettuce, spinach, etc.)

1 cup cherry tomatoes, halved

1 cucumber, sliced
4.
1 cup shredded carrots
5.
1 cup vegan chicken strips (like Dr. Praeger’s)
6.
1/2 cup shredded low-fat cheese (optional)
7.
1/2 cup croutons (preferably whole grain)
8.
1/4 cup low-calorie dressing (like balsamic vinaigrette or a yogurt-based dressing)
