Instructions

Preheat your oven to 375°F (190°C).

In a large skillet, heat olive oil over medium heat. Add the vegan mince and cook for about 5 minutes until browned.

Stir in the peas and diced carrots, along with garlic powder, onion powder, salt, and pepper. Cook for another 5-7 minutes until the vegetables are tender.

In a separate pot, prepare your mashed cauliflower (or potatoes) by boiling until soft, then mashing with a bit of salt and pepper.

Layer the vegan mince mixture in a baking dish, then top with the mashed cauliflower. Spread evenly.

Bake in the preheated oven for 15-20 minutes until the top is slightly golden.

Serve with a side salad of mixed greens and sliced cucumber for added fiber and freshness.
