Instructions
1.
In a bowl, whisk together the eggs, salt, and pepper until well combined (2 minutes).

Heat a non-stick skillet over medium heat and add the sliced mushrooms. Sauté for about 3 minutes until softened.

Add the chopped spinach and cherry tomatoes to the skillet, cooking for an additional 2 minutes until the spinach wilts.
4.
Pour the egg mixture over the vegetables in the skillet. Cook for about 3-4 minutes, gently stirring to scramble the eggs until fully cooked.
5.
If using cheese, sprinkle it on top and let it melt for a minute before serving.
6.
Toast the whole grain bread while the omelette is cooking, then serve alongside the omelette.
