Your vegetable omelette with wheat toast and mushrooms looks absolutely scrumptious! The mushrooms are a great source of fiber and will help keep you feeling full. The protein from the eggs will also contribute to this feeling of satiety. Amazing choice!

Instructions

  • 1.

    In a bowl, whisk together the eggs, salt, and pepper until well combined (2 minutes).

  • 2.

    Heat a non-stick skillet over medium heat and add the sliced mushrooms. Sauté for about 3 minutes until softened.

  • 3.

    Add the chopped spinach and cherry tomatoes to the skillet, cooking for an additional 2 minutes until the spinach wilts.

  • 4.

    Pour the egg mixture over the vegetables in the skillet. Cook for about 3-4 minutes, gently stirring to scramble the eggs until fully cooked.

  • 5.

    If using cheese, sprinkle it on top and let it melt for a minute before serving.

  • 6.

    Toast the whole grain bread while the omelette is cooking, then serve alongside the omelette.
