Instructions
1.
Cook the udon noodles according to package instructions (about 5-7 minutes). Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and cook for 3-4 minutes until softened.

Add veggie crumbles to the skillet and cook for another 5 minutes, stirring occasionally.

Add broccoli florets and a splash of water to the skillet, cover, and steam for 3-4 minutes until broccoli is tender.
5.
Combine the cooked udon noodles with the veggie mixture, season with salt and pepper, and toss well.
6.
Serve the noodles topped with sliced cucumber and avocado, and sprinkle with Parmesan cheese if desired.
