Instructions
1.
Preheat your oven to 350°F (175°C).
2.
In a bowl, mix the refried beans, cooked brown rice, and half of the diced tomatoes.
3.
Spread a thin layer of enchilada sauce on the bottom of a baking dish.
4.
Fill each tortilla with the bean and rice mixture, add a handful of spinach, and roll them up tightly.
5.
Place the rolled tortillas seam-side down in the baking dish.
6.
Pour the remaining enchilada sauce over the top and sprinkle with reduced-fat cheese.
7.
Bake for 20 minutes or until the cheese is melted and bubbly.
8.
Serve topped with shredded lettuce and the remaining diced tomatoes.
