Instructions
1.
In a large bowl, combine the white beans, cherry tomatoes, cucumber, red onion, and spinach (if using).
2.
In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
3.
Pour the dressing over the salad and toss gently to combine.
4.
Add the cubed bread and toss again until the bread is well coated.
5.
Serve immediately or let it sit for 10 minutes to allow the flavors to meld.

1 can (15 oz) white beans, drained and rinsed

2 cups cherry tomatoes, halved

1 cucumber, diced
4.
1 small red onion, thinly sliced
5.
2 cups whole grain bread, cubed

2 tablespoons olive oil

2 tablespoons red wine vinegar
8.
1 teaspoon dried oregano
9.
Salt and pepper to taste
10.
2 cups fresh spinach (optional for added fiber)
