Instructions

  • 1.

    In a large pot, heat a splash of water or olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent (about 5 minutes).

  • 2.

    Add the diced eggplant and cook for another 5-7 minutes until softened.

  • 3.

    Stir in the cooked chickpeas, diced tomatoes, cumin, paprika, salt, and pepper. Let it simmer for 15-20 minutes, stirring occasionally.

  • 4.

    If using, add fresh spinach in the last 5 minutes of cooking to wilt.

  • 5.

    Toast the whole wheat bread slices while the stew is simmering.

  • 6.

    Serve the chickpea and eggplant stew over the toasted bread, topped with a slice of Brie cheese if desired.

    1 medium eggplant, diced

    1 can diced tomatoes (14 oz)

    1 onion, chopped

    2 cloves garlic, minced

    1 tsp paprika

  • 8.

    Salt and pepper to taste

  • 9.

    4 slices whole wheat bread

  • 10.

    2 oz Brie cheese (optional)

  • 11.

    2 cups fresh spinach (optional for added fiber)
