Instructions
1.
Cook the whole wheat noodles according to package instructions. Drain and set aside (about 8-10 minutes).

In a large skillet, heat olive oil over medium heat. Add minced garlic and ginger, sautéing for about 1 minute until fragrant.

Add broccoli and red bell pepper to the skillet. Stir-fry for 5-7 minutes until vegetables are tender but still crisp.
4.
Add the cooked chicken (or tofu) to the skillet, followed by the cooked noodles.
5.
Pour in the low-sodium soy sauce, and toss everything together until well combined. Season with salt and pepper to taste.
6.
If using, add spinach and stir until wilted. Serve hot.
