Instructions

  • 1.

    Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside (about 10-12 minutes).

  • 2.

    In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent (about 3-4 minutes).

  • 3.

    Add diced zucchini, yellow squash, and green bell pepper to the skillet. Sauté for another 5-7 minutes until vegetables are tender.

  • 4.

    In a bowl, mix lean ground turkey with salt, pepper, and Italian seasoning. Form into small meatballs.

  • 5.

    In a separate pan, cook the meatballs over medium heat until browned and cooked through (about 8-10 minutes).

  • 6.

    Combine the cooked pasta, sautéed vegetables, meatballs, and spaghetti sauce in the skillet. Stir well to combine and heat through for another 5 minutes.

  • 7.

    If using, add fresh spinach just before serving, allowing it to wilt slightly.
