Instructions
1.
Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
2.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
3.
Add sliced shiitake mushrooms and cook for about 5 minutes until they are tender.
4.
Stir in the chopped kale and cook for another 3-4 minutes until wilted.
5.
Add the drained clams and vegetable broth to the skillet. Season with red pepper flakes, salt, and pepper. Cook for an additional 3-4 minutes until heated through.
6.
Combine the cooked pasta with the clam and vegetable mixture, tossing to coat evenly.
7.
Serve hot, garnished with fresh parsley.

1 can (15 oz) clams, drained and rinsed

2 cups kale, chopped

1 cup shiitake mushrooms, sliced

2 cloves garlic, minced

1/4 cup low-sodium vegetable broth

1 tbsp olive oil
8.
1/2 tsp red pepper flakes (optional)
9.
Salt and pepper to taste
10.
Fresh parsley for garnish
