Instructions

1. In a large bowl, coat the chicken breasts with olive oil, za'atar, salt, and pepper. Let marinate for 10 minutes.

2. In a medium saucepan, combine quinoa and chicken broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until quinoa is fluffy.

3. While the quinoa cooks, heat a large skillet over medium heat. Add the marinated chicken and cook for about 6-7 minutes on each side, or until fully cooked and golden brown.

4. Remove the chicken from the skillet and let it rest for a few minutes before slicing.

5. In the same skillet, add diced carrots and cook for 5 minutes until slightly tender. Then add chickpeas, black beans, and spinach, cooking until the spinach wilts.

6. Fluff the quinoa with a fork and mix it into the skillet with the vegetables. Adjust seasoning if needed.

7. Serve the quinoa mixture topped with sliced chicken and a squeeze of fresh lemon juice if desired.

1 cup quinoa, rinsed

2 cups fresh spinach, chopped

1 can (15 oz) chickpeas, drained and rinsed

2 medium carrots, diced

1 can (15 oz) black beans, drained and rinsed
9.
1 tablespoon olive oil

Salt and pepper to taste
11.
Fresh lemon juice (optional, for serving)
