Instructions
1.
In a large bowl, combine the arugula, cooked brown rice blend, and fresh spinach (if using).

Add the halved cherry tomatoes and diced mozzarella to the bowl.
3.
Sprinkle the sliced almonds over the salad.
4.
Drizzle the balsamic vinaigrette over the top and toss gently to combine all ingredients.
5.
Serve immediately or chill in the refrigerator for 30 minutes for enhanced flavors.
