Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    In a large bowl, toss the diced potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them on a sheet pan and roast for 15 minutes.

  • 3.

    While the potatoes are roasting, season the chicken breasts with salt, pepper, and dried basil.

  • 4.

    After 15 minutes, remove the sheet pan from the oven and push the potatoes to one side. Place the chicken breasts on the other side of the pan.

  • 5.

    Pour the low-sugar tomato sauce over the chicken breasts, ensuring they are well coated.

  • 6.

    Add the asparagus to the pan, drizzling with the remaining olive oil and seasoning with salt and pepper.

  • 7.

    Return the sheet pan to the oven and roast for an additional 15-20 minutes, or until the chicken is cooked through and the vegetables are tender.

  • 8.

    Serve hot and enjoy your healthy basil chicken!
