Cauliflower rice baked asparagus grilled shrimp ribeye steak

Delicious choice for dinner! The shrimp and steak are excellent sources of lean protein and the cauliflower and asparagus are great choices as they are rich in fiber

Instructions

  • 1.

    Heat olive oil in a large skillet over medium-high heat (about 2 minutes).

  • 2.

    Add the ribeye strips and cook for 4-5 minutes until browned. Remove from skillet and set aside.

  • 3.

    In the same skillet, add garlic and ginger, sauté for 1 minute until fragrant.

  • 4.

    Add broccoli and asparagus, stir-frying for 5-7 minutes until tender-crisp.

  • 5.

    Return the steak to the skillet, add soy sauce, and stir to combine. Cook for an additional 2 minutes.

  • 6.

    Meanwhile, prepare cauliflower rice according to package instructions.

  • 7.

    Serve the beef and broccoli mixture over cauliflower rice, garnished with sesame seeds if desired.

    2 cups broccoli florets

    1 cup asparagus, trimmed and cut into 2-inch pieces

  • 4.

    2 cups cauliflower rice

    1 tablespoon olive oil

  • 6.

    2 cloves garlic, minced

  • 7.

    1 tablespoon low-sodium soy sauce

  • 8.

    1 teaspoon ginger, grated

  • 9.

    Salt and pepper to taste

  • 10.

    Optional: sesame seeds for garnish
