Great effort! Your choice of a small portion of rice beef and mostly broccoli and eggplant is a smart way to incorporate fiber-rich foods and lean proteins into your meal and balance your breakfast from earlier.

Instructions

  • 1.

    1. Heat olive oil in a large skillet over medium-high heat.

  • 2.

    2. Add the sliced beef and cook for about 5-7 minutes until browned. Remove from the skillet and set aside.

    3. In the same skillet, add garlic and ginger, sauté for 1 minute until fragrant.

  • 4.

    4. Add broccoli, eggplant, carrots, onion, and green pepper. Stir-fry for about 5-7 minutes until vegetables are tender-crisp.

    5. Return the beef to the skillet, add soy sauce, and stir to combine. Cook for an additional 2-3 minutes.

    6. Season with salt and pepper to taste. Serve hot over a small portion of rice or cauliflower rice.
