Instructions
1.
Heat the organic olive oil in a large skillet over medium heat (about 2 minutes).
2.
Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned (about 5-7 minutes).
3.
Season the beef with salt and pepper to taste.
4.
Add the broccoli florets and zucchini slices to the skillet. Stir well and cook for another 5-7 minutes until the vegetables are tender.
5.
Stir in the cooked brown rice and mix until everything is well combined and heated through (about 2-3 minutes).
6.
Remove from heat and sprinkle the low-fat cheddar cheese on top. Cover for a minute to allow the cheese to melt.
7.
Serve warm and enjoy your healthy beef and broccoli!
