Instructions

    In a large skillet, heat the olive oil over medium heat (about 2 minutes).

    Add the shredded cabbage and cook until softened, about 5 minutes.

    Stir in the corn and cook for an additional 3 minutes until heated through.

    Add the cooked beef to the skillet, seasoning with salt and pepper. Stir until everything is well combined and heated through (about 5 minutes).

    If using spinach, add it in the last minute of cooking until wilted.

    Serve the beef and veggie mixture over a bed of mashed potatoes, topped with a scoop of cottage cheese.
