Instructions
1.
1. Cook the brown rice according to package instructions (about 20 minutes).

2. While the rice is cooking, heat olive oil in a large skillet over medium heat.

3. Add the sliced onion and bell pepper to the skillet, sautéing for about 5 minutes until softened.

4. Add the sliced carrots and cook for another 5 minutes.

5. Season the vegetables with garlic powder, cumin, salt, and pepper.

6. Push the vegetables to one side of the skillet and add the lean beef, cooking for about 5-7 minutes until browned and cooked through.

7. Stir in the black beans and spinach, cooking until the spinach wilts (about 2 minutes).

8. Serve the beef and vegetable mixture over the cooked brown rice.
