Instructions
1.
In a skillet over medium heat, cook the lean ground beef until browned, about 5-7 minutes. Drain excess fat if necessary.

While the beef is cooking, prepare the salad base by combining mixed greens, cucumber, cherry tomatoes, and purple onion in a large bowl.
3.
Once the beef is cooked, add it to the salad bowl.
4.
Top the salad with shredded cheese and baked tortilla chips.
5.
Drizzle with light ranch dressing and toss gently to combine. Serve immediately.

1 lb lean ground beef (90% lean or higher)

4 cups mixed greens (spinach, lettuce, cilantro)

1 cucumber, sliced
4.
1 cup cherry tomatoes, halved
5.
1/2 purple onion, thinly sliced
6.
1/2 cup shredded low-fat cheese
7.
1/2 cup baked tortilla chips (or substitute with whole grain chips)
8.
1/4 cup light ranch dressing
