Instructions

1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent (about 3-4 minutes).

2. Add the beef cubes to the pot, browning them on all sides (about 5-7 minutes).

3. Stir in the carrots, peas, corn, and barley, mixing well.

4. Pour in the beef broth and add thyme, black pepper, and salt. Bring to a boil.

5. Reduce heat to low, cover, and let simmer for 30 minutes, or until the beef is tender and barley is cooked.

6. Stir in the chopped spinach and cook for an additional 5 minutes until wilted.
