Instructions

  • 1.

    Heat olive oil in a large pot over medium heat (about 2 minutes).

    Add the chopped onion and minced garlic, sauté until translucent (about 5 minutes).

    Add the beef cubes and brown on all sides (about 5-7 minutes).

  • 4.

    Stir in the carrots, celery, and green beans, cooking for another 5 minutes.

    Pour in the beef broth and add thyme, rosemary, salt, and pepper.

  • 6.

    Bring to a boil, then reduce heat and let simmer for 30 minutes.

  • 7.

    Add spinach in the last 5 minutes of cooking for added fiber.

  • 8.

    Taste and adjust seasoning if necessary before serving.
