Instructions
1.
Cook the whole grain tortellini according to package instructions (about 5-7 minutes). Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add the lean ground beef and cook until browned (about 5-7 minutes).

Stir in the chopped kale, peas, and corn. Cook for an additional 3-4 minutes until the vegetables are tender.
4.
Add the cooked tortellini to the skillet and mix well. Stir in the ricotta cheese, garlic powder, salt, and pepper. Cook for another 2-3 minutes until everything is heated through.
5.
Serve warm and enjoy your healthy beef tortellini!
