Instructions

1. Start by roasting the beetroots. Preheat your oven to 400°F (200°C). Wrap the beetroots in foil and roast for about 30-40 minutes until tender. Let them cool, then peel and dice.

2. While the beetroots are roasting, cook the orzo according to package instructions. Drain and set aside.

3. In a skillet, scramble the tofu over medium heat for about 5-7 minutes until heated through. Season with salt and pepper.

4. In a large bowl, combine the roasted beetroots, cooked lima beans, cooked orzo, and chopped spinach.

5. Drizzle with olive oil and balsamic vinegar, then toss gently to combine.

6. Top the salad with scrambled tofu and crumbled feta cheese.

7. Garnish with fresh herbs and serve immediately.
