Instructions
1.
In a large bowl, combine the black beans, corn, cherry tomatoes, avocado, and black olives.
2.
Add the cauliflower rice and chopped cilantro to the bowl.
3.
Drizzle with lime juice and season with salt and pepper to taste.
4.
Gently toss all ingredients together until well mixed.
5.
Serve topped with a dollop of plain Greek yogurt.

1 cup cherry tomatoes, halved

1 avocado, diced
5.
1/2 cup black olives, sliced

1 cup cauliflower rice
8.
1/4 cup fresh cilantro, chopped
9.
Juice of 1 lime
10.
Salt and pepper to taste
