Instructions
1.
In a large bowl, combine the mixed greens, black beans, corn, avocado, and cherry tomatoes.

In a skillet over medium heat, add a splash of olive oil and cook the shrimp for about 3-4 minutes on each side until they are pink and opaque.

In a small bowl, whisk together the olive oil, lime juice, salt, and pepper to create a light dressing.
