Instructions
1.
In a large bowl, combine the black beans, corn, salsa, diced bell peppers, chopped spinach, and red onion.
2.
Add lime juice, cumin, salt, and pepper. Mix well until all ingredients are evenly coated.
3.
Taste and adjust seasoning if necessary. Let it sit for 5 minutes to allow flavors to meld.
4.
Serve chilled or at room temperature.

1 cup salsa (preferably low-sugar)

1 cup diced bell peppers (any color)

1 cup chopped spinach

1/4 cup chopped red onion
