Leftover bean salad for dinner

Looks great!! Feel free to pair it with some green salad. And well done having water along with your meal :)

Instructions

  • 1.

    In a large bowl, combine the black beans, corn, salsa, diced bell peppers, chopped spinach, and red onion.

  • 2.

    Add lime juice, cumin, salt, and pepper. Mix well until all ingredients are evenly coated.

  • 3.

    Taste and adjust seasoning if necessary. Let it sit for 5 minutes to allow flavors to meld.

  • 4.

    Serve chilled or at room temperature.
