Instructions
1.
In a large bowl, combine the black beans, cucumber, green pepper, cherry tomatoes, feta cheese, and red onion.
2.
In a small bowl, whisk together the olive oil, apple cider vinegar, lime juice, salt, and pepper.
3.
Pour the dressing over the salad and toss gently to combine.
4.
Serve the salad on a bed of mixed greens.

1 medium cucumber, diced

1 green pepper, diced
4.
1 cup cherry tomatoes, halved
5.
1/2 cup feta cheese, crumbled
6.
4 cups mixed salad greens (spinach, romaine, etc.)
7.
1/4 cup red onion, finely chopped
8.
1 tablespoon olive oil
9.
1 tablespoon apple cider vinegar
10.
1 teaspoon lime juice
11.
Salt and pepper to taste
