Instructions
1.
In a large skillet, heat olive oil over medium heat (about 2 minutes).
2.
Add sliced zucchini and sauté for about 5 minutes until tender.
3.
Stir in black beans, flaxseed, and saffron. Cook for an additional 3-4 minutes until heated through.
4.
Season with salt and pepper to taste.
5.
Remove from heat and gently fold in mozzarella ciliegine.
6.
Serve warm or at room temperature, optionally with a slice of whole wheat bread.

2 cups black beans (cooked or canned, rinsed and drained)
2.
2 medium zucchinis, sliced or spiralized
3.
1/4 cup mozzarella ciliegine (small mozzarella balls)
4.
1 tablespoon flaxseed
5.
1/4 teaspoon saffron threads
6.
1 tablespoon olive oil
7.
Salt and pepper to taste
8.
1 slice whole wheat bread (optional, for serving)
