Great work Martina! Youre just one meal away from reaching your weekly target. Some nice fiber from the beans and zucchini along with the protein from the mozzarella ciliegine. Lets keep it up!

Instructions

  • 1.

    In a large skillet, heat olive oil over medium heat (about 2 minutes).

  • 2.

    Add sliced zucchini and sauté for about 5 minutes until tender.

  • 3.

    Stir in black beans, flaxseed, and saffron. Cook for an additional 3-4 minutes until heated through.

  • 4.

    Season with salt and pepper to taste.

  • 5.

    Remove from heat and gently fold in mozzarella ciliegine.

  • 6.

    Serve warm or at room temperature, optionally with a slice of whole wheat bread.

    1/4 teaspoon saffron threads

  • 6.

    1 tablespoon olive oil
