Instructions
1.
1. Preheat your oven to 400°F (200°C).

2. Toss the diced sweet potato with a little olive oil, salt, and pepper. Spread on a baking sheet and roast for about 20 minutes, or until tender.

3. While the sweet potato is roasting, steam the broccoli and cauliflower florets for about 5-7 minutes until bright green and tender-crisp.

4. In a large bowl, combine the chickpeas, cilantro, parsley, red onion, and garlic.

5. Once the sweet potato is done, add it to the bowl with the other ingredients.

6. In a small bowl, whisk together the EVOO, apple cider vinegar, Dijon mustard, salt, and pepper.

7. Pour the dressing over the salad and toss gently to combine. Serve immediately or chill in the refrigerator for 30 minutes for enhanced flavors.
