Instructions
1.
In a large bowl, combine the shredded broccoli, shredded carrots, and shredded chicken.
2.
In a separate small bowl, whisk together the Greek yogurt, apple cider vinegar, Dijon mustard, salt, and pepper until smooth.
3.
Pour the dressing over the salad mixture and toss until everything is well coated.
4.
Sprinkle sunflower seeds on top for added crunch.
5.
Serve immediately or refrigerate for 30 minutes to let the flavors meld.
