Instructions
1.
Heat olive oil in a large skillet over medium heat (about 2 minutes).

Add minced garlic and ginger, sauté for 1 minute until fragrant.

Add diced chicken to the skillet, season with salt and pepper, and cook for 5-7 minutes until browned and cooked through.

Stir in broccoli, carrots, and cabbage, cooking for an additional 5 minutes until vegetables are tender.

Add cooked brown rice and soy sauce, mixing well to combine all ingredients. Cook for another 2-3 minutes.
6.
Finally, stir in cashews and serve hot.
