Instructions
1.
Cook the brown rice according to package instructions (about 15-20 minutes).

In a large skillet, heat olive oil over medium heat. Add minced garlic and ginger, sauté for 1-2 minutes until fragrant.

Add diced chicken to the skillet, season with salt and pepper, and cook for 5-7 minutes until browned and cooked through.
4.
Stir in broccoli florets and cook for an additional 3-4 minutes until tender.
5.
Add soy sauce and cashews, mixing well to combine. Cook for another 2 minutes.
6.
Serve the cashew chicken over brown rice and garnish with chopped green onions.
