Instructions
1.
Preheat your oven to 400°F (200°C).
2.
Slice the cauliflower into 1-inch thick steaks and place them on a baking sheet.
3.
Spread the pesto evenly over the cauliflower steaks.
4.
Season the pork loin with salt and pepper, then sear in a hot skillet for 3-4 minutes on each side until browned.
5.
Transfer the pork loin to the oven and roast for 15-20 minutes until cooked through (internal temperature of 145°F).
6.
While the pork is cooking, roast the cauliflower steaks in the oven for 20 minutes until tender and slightly golden.
7.
Serve the pork loin alongside the cauliflower steaks, with apple slices and a dollop of peanut butter on the side.
