Instructions
1.
Preheat your oven to 400°F (200°C).
2.
Season the chicken breasts with salt and pepper.
3.
Coat each chicken breast in panko breadcrumbs, pressing gently to adhere.
4.
Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5-7 minutes on each side until golden brown and cooked through.

While the chicken is cooking, steam the broccoli and corn until tender, about 5-7 minutes.
6.
In a large bowl, combine the kale, coleslaw mix, lemon juice, and a pinch of salt. Toss to combine.
7.
Once the chicken is cooked, slice it and serve it alongside the steamed broccoli, corn, and kale salad.
