Instructions
1.
1. Heat olive oil in a large skillet over medium heat (about 2 minutes).

2. Season chicken breasts with salt, pepper, garlic powder, and ginger powder.

3. Add chicken to the skillet and cook for about 6-7 minutes on each side until fully cooked (internal temperature should reach 165°F).

4. While the chicken is cooking, steam the broccoli florets until tender (about 5-7 minutes).

5. In a small bowl, mix soy sauce and honey (or alternative) to create the sauce.

6. Once the chicken is cooked, pour the sauce over the chicken and let it simmer for 2-3 minutes.

7. If using, add spinach to the skillet and stir until wilted.

8. Serve the chicken over a bed of broccoli and spinach, drizzling any remaining sauce on top.

4 boneless, skinless chicken breasts (about 1.5 lbs)

4 cups broccoli florets

1 tablespoon olive oil

1/4 cup low-sodium soy sauce
5.
1 tablespoon honey or a sugar-free alternative

1 teaspoon garlic powder
7.
1 teaspoon ginger powder
8.
Salt and pepper to taste
9.
Optional: 1 cup spinach (for added fiber)
