Instructions
1.
1. Preheat your oven to 400°F (200°C).

2. In a pot, boil water and add the sweet potatoes. Cook for about 15 minutes or until tender.

3. While the sweet potatoes are cooking, season the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.

4. Heat a skillet over medium heat and cook the chicken for about 6-7 minutes on each side until fully cooked.

5. In the last 5 minutes of cooking the chicken, add the broccoli and carrots to the skillet to steam.

6. Drain the sweet potatoes and mash them with a fork or potato masher. Season with salt and pepper to taste.

7. Serve the chicken alongside the steamed vegetables and sweet potato mash.

4 boneless, skinless chicken breasts (about 1.5 lbs)

2 cups broccoli florets

2 medium carrots, sliced
4.
2 medium sweet potatoes, peeled and cubed

1 tablespoon olive oil
