Instructions

1. In a large skillet, heat the olive oil over medium heat (about 2 minutes).

2. Add the chicken breast nuggets and cook until heated through and slightly crispy, about 5-7 minutes.

3. Add the broccoli, carrots, sugar snap peas, and water chestnuts to the skillet. Stir-fry for another 5 minutes until the vegetables are tender-crisp.

4. Sprinkle garlic powder and ginger over the mixture, and drizzle with low-sodium soy sauce. Stir well to combine and cook for an additional 2 minutes.

5. Season with salt and pepper to taste, then remove from heat and serve immediately.
