Instructions

1. Cook the brown rice according to package instructions. This usually takes about 20 minutes.

2. While the rice is cooking, heat olive oil in a large skillet over medium heat.

3. Add the diced chicken to the skillet and season with salt and pepper. Cook for about 5-7 minutes until browned and cooked through.

4. Add minced garlic and grated ginger to the skillet, cooking for an additional 1-2 minutes until fragrant.

5. Add the broccoli florets to the skillet, stirring to combine. Cover and cook for about 5 minutes until the broccoli is tender but still bright green.

6. If using, drizzle low-sodium soy sauce over the chicken and broccoli, stirring to coat evenly.

7. Serve the chicken and broccoli over a bed of brown rice, garnished with sesame seeds.
