Instructions
1.
Preheat your oven to 400°F (200°C).
2.
In a large bowl, mix olive oil, garlic powder, onion powder, paprika, salt, and pepper.
3.
Add the chicken breasts to the bowl and coat them evenly with the seasoning mixture.
4.
Place the chicken breasts on a baking sheet lined with parchment paper.
5.
In the same bowl, add the broccoli, bell peppers, and purple cauliflower. Toss them in the remaining seasoning mixture.
6.
Spread the vegetables around the chicken on the baking sheet.
7.
Bake for 20 minutes or until the chicken is cooked through and the vegetables are tender.
8.
Let it rest for a few minutes before slicing the chicken. Serve warm.

4 boneless, skinless chicken breasts (about 4 oz each)

2 cups broccoli florets
3.
1 red bell pepper, sliced

1 yellow bell pepper, sliced
5.
1 cup purple cauliflower florets

1 tablespoon olive oil

Salt and pepper to taste
8.
1 teaspoon garlic powder
9.
1 teaspoon onion powder
10.
1 teaspoon paprika
