Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    In a large bowl, toss the diced potatoes with olive oil, garlic powder, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until golden and tender.

  • 3.

    While the potatoes are roasting, season the chicken breasts with salt and pepper. Heat a non-stick skillet over medium heat and cook the chicken for about 6-7 minutes on each side until fully cooked.

  • 4.

    In the last few minutes of cooking, add the spinach and red onion to the skillet, allowing them to wilt slightly.

  • 5.

    Once everything is cooked, assemble your plates with a bed of lettuce, topped with the roasted potatoes, chicken, and sautéed spinach and onion. Drizzle with yogurt or your preferred sauce.
