Instructions

    1. Rinse the brown rice under cold water until the water runs clear. Cook the rice according to package instructions, using water or low-sodium chicken broth for added flavor (about 30 minutes).

    2. While the rice is cooking, season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).

    3. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

    4. In a small bowl, mix lime juice and chopped basil to create the sauce.
