Instructions
1.
Preheat your oven to 375°F (190°C).
2.
In a large bowl, mix the cooked brown rice or cauliflower rice, corn, diced bell peppers, and green onions.
3.
In a separate bowl, season the chicken breasts with olive oil, garlic powder, onion powder, salt, and pepper.
4.
Place the seasoned chicken in a baking dish and cover it with the rice and vegetable mixture.
5.
Sprinkle the low-fat cheese on top.
6.
Cover the dish with foil and bake for 20 minutes.
7.
Remove the foil and bake for an additional 5 minutes, or until the chicken is cooked through and the cheese is melted.
8.
Let it cool for a few minutes before serving.

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste
