Instructions
1.
Heat olive oil in a large skillet over medium heat (about 2 minutes).

Add minced garlic and ginger, sauté for 1 minute until fragrant.
3.
Add diced chicken breast to the skillet, season with salt and pepper, and cook for 5-7 minutes until browned.
4.
Stir in broccoli, bell pepper, and carrots. Cook for another 5 minutes until vegetables are tender.
5.
Add spinach and soy sauce, cooking for an additional 2-3 minutes until spinach wilts.
6.
Serve hot, garnished with sesame seeds if desired.
