Instructions

    Preheat your oven to 375°F (190°C).

    If using breaded chicken, lightly coat the chicken breast fillets with olive oil and place them on a baking sheet.

    Bake the chicken for about 20 minutes or until fully cooked (internal temperature should reach 165°F/75°C).

    While the chicken is baking, prepare the spinach by lightly sautéing it in a pan with a little olive oil for about 3-4 minutes until wilted.

    Slice the bananas into rounds.

    Once the chicken is cooked, serve it on a plate with a generous scoop of low-fat cottage cheese, sautéed spinach, and banana slices on the side.
