Instructions
1.
Preheat your oven to 375°F (190°C).
2.
In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Coat the chicken breasts with this mixture.
3.
Place the chicken breasts on a baking sheet and bake for 20 minutes or until cooked through.
4.
While the chicken is baking, steam the sliced carrots until tender, about 5-7 minutes.

In a large bowl, combine cooked lentils, steamed carrots, and fresh spinach (if using). Mix well.
6.
Serve the baked chicken on a bed of the lentil and carrot mixture, topped with a dollop of cottage cheese.
