Dinner is roasted chicken thigh green beans and red curry sauce that I made myself (no sugar and low fat coconut milk).

Instructions

  • 1.

    Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent.

    Add minced garlic and grated ginger, cooking for an additional minute until fragrant.

  • 3.

    Season the chicken thighs with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side until browned.

    Stir in the red curry paste, ensuring the chicken is well coated.

  • 5.

    Pour in the low-fat coconut milk and bring to a simmer. Cover and cook for 15-20 minutes until the chicken is cooked through.

  • 6.

    In the last 5 minutes of cooking, add the green beans and stir to combine. Cook until the beans are tender but still crisp.

  • 7.

    Serve hot, garnished with fresh cilantro if desired.
