Instructions
1.
Heat olive oil in a large pot over medium heat (about 2 minutes).
2.
Add diced chicken and cook until browned (about 5-7 minutes).
3.
Stir in mixed vegetables and cook for another 5 minutes until slightly softened.
4.
Add diced tomatoes, chicken broth, curry powder, salt, and pepper. Bring to a simmer.
5.
Stir in peas and chickpeas, and let the soup simmer for 15 minutes.
6.
Meanwhile, cook brown rice according to package instructions.
7.
Serve the curry soup over a bed of brown rice, and top with fresh spinach if desired.

1 lb lean chicken breast, diced

1 cup mixed vegetables (carrots, bell peppers, zucchini)
3.
1 can (14 oz) diced tomatoes, no added sugar
4.
1 cup low-sodium chicken broth
5.
1 cup peas (fresh or frozen)
6.
1 can (15 oz) chickpeas, drained and rinsed
7.
2 tablespoons curry powder
8.
1 tablespoon olive oil
9.
1/3 cup brown rice (uncooked)
10.
Salt and pepper to taste
11.
Fresh spinach (optional, for added fiber)
