Instructions
1.
Preheat your oven to 400°F (200°C).
2.
Season the chicken drumsticks with salt, pepper, and half of the olive oil.

Place the drumsticks on a baking sheet and bake for 25-30 minutes, or until cooked through and golden brown.

While the chicken is baking, steam the cauliflower and asparagus until tender, about 5-7 minutes.

In a large bowl, combine the mixed greens, steamed vegetables, diced potatoes, remaining olive oil, lemon juice, salt, and pepper. Toss well to combine.
6.
Once the chicken is done, serve it alongside the salad, garnished with fresh herbs if desired.
